Chef Simone Falco Says it's OK to Eat Pizza Every Day
Chef Simone Falco is known for his authentic Italian cuisine, and also for fact that he just "Beat Bobby Flay" with his Ossobucco recipe. Falco stops by Cheddar to let us try the winning recipe, and also to tell us about his new fast casual restaurant, SIMÒ Pizza.
Each pizza at SIMÒ will be priced at around $10, with vegetarian and vegan options available. Falco says that the low-carb craze isn't really affecting the pizza business. He believes that done right, with natural ingredients, pizza can be healthy. He eats pizza every day.
Falco also explains why he's getting into the quick-service restaurant space after the success of his Neopolitan eateries, Rossopomodoro in the West Village and Rossopomodoro at Eataly. He's confident enough in the concept that he'll open one new location in February, and a second in the summer.
